kadhamba sadham (mixed vegetable rice)

ingredients

  • Rice - 2 cups
  • Thur dhal - 1/2 cup
  • Potato - 1
  • Sweet potato - 1
  • Brinjal - 2
  • Sheat beans - 5
  • Long beans - 5
  • Carrot - 1
  • Pumpkin - a small piece
  • Red pumpkin - a small piece
  • Peas - a handful
  • Tamarind - a lime size
  • Mustard = 1/2 tsp
  • Sambhar powder - 1/2 tsp.
  • Salt - 2 tsp.
  • Curry leaves

For masala

  • Coriander seeds - 2 tsp.
  • Bengalgram dhal - 1 tsp.
  • Red chillies - 6
  • Asafoetida - a bit
  • Fenugreek - 1/2 tsp.

Fry the the above ingredients, grind to smooth paste or powder nicely.

method of preparation

  • Cook rice and dhal seperately using pressure cooker.
  • Chop and cook the vegetables.
  • Extract about 200ml. of tamarind juice.
  • Add salt, sambar powderand curry leaves and bring to boil.
  • Add the ground masala.
  • Let it simmer well and now add the cooked vegetables and dhal.
  • Mix well and simmer for five minutes.
  • Remove from the fire.
  • Meanwhile, pour a tbl.sp. of ghee and tbl. sp. of gingelly oil on the rice and mash well.
  • Add rice to the sambar.
  • Mix well with a ladle to avoid lumps.
  • Season with mustard and garnish with coriander leaves.
  • Now the delicious kadhamba sadam is ready. This is prepared during mattu pongal.
